Greece: Lamb with feta salad: Greek cooking uses lots of fresh vegetables, lamb and feta cheese, so it makes sense to combine them all in this healthy salad. The lamb is cooked over sliced potatoes and tomatoes with plenty of mint, keeping it light and fresh, so it’s ideal for lunch or as an evening meal in the garden. If you’re really getting in the mood, add houmous with pitta and vegetable sticks on the side, and maybe a honey yoghurt cheesecake for dessert!

Spain: Paella: Spain is famous for this smoky rice dish, cooked in stock and scattered with seafood. Its distinctive yellow colour comes from saffron, while a sprinkle of paprika gives it its deep, smoky flavour. If you’re not a fan of seafood, you can swap it out for chicken and serve on its own as a well-deserved evening feast!

Croatia: Goulash: Cooler summer evenings are ideal if you want to try making goulash – a hearty beef casserole with tomato, wine and garlic. In Croatia it’s served over polenta but egg noodles or mashed potato also make a great combination.

Cyprus: Loukoumades: Great for those of you with a sweet tooth, these deep fried doughnuts are most likely to be found drizzled with honey or syrup and sometimes sprinkled with cinnamon. Try them as an evening treat!

Egypt: Eish Masri: Fancy trying your hand at homemade pitta bread, Egyptian style? They make a great snack with summer dips like guacamole, salsa and houmous!

America: Key lime pie: This zesty oven baked treat is filled with a creamy lime centre and topped with meringue – indulgent but zesty enough to keep things light and refreshing.

Italy: Calzone: Tomato and mozzarella are a perfect match within this folded pizza, but you don’t have to stop there. Try vegetables, chicken or even pepperoni, and eat hot or cold for lunch or tea.
